Chickpea Fiesta Salad with Cilantro-lime Dressing

This Fiesta Salad is super yummy and easy to make. Plus, it keeps nicely in the refrigerator, with the flavors only getting better overnight. It is a great option for potlucks. My husband is not a fan of corn, so I usually leave a portion without just for him and he likes it all the same.

Salad Ingredients

  • 2-1/2 cups corn, fresh or frozen
  • 2 cans of chickpeas, drained and rinsed
  • 3 cups cherry tomatoes, quartered
  • 1 small red onion, diced
  • 1 cucumber, chopped

Dressing Ingredients

  • 3/4 cup extra virgin olive oil
  • 1/4 cup fresh cilantro, chopped
  • 4 tablespoons lime juice
  • 1 clove of garlic, crushed and minced
  • 1 teaspoon salt
  • 1 teaspoon pepper


  1. Combine the vegetables in a large bowl. Whisk the dressing ingredients in a separate bowl. Pour the dressing over the vegetables and stir.
