Oven-roasted Butternut Squash Fries

My husband gladly chooses these over regular fries. Make sure they get a little crispy on the edges and soft in the center. Season as you like. We like to add a little spicy rub sometimes or garlic.


  • 1 medium butternut squash
  • coconut oil spray
  • salt, pepper


  1. Preheat the oven to 425° F.
  2. Peel squash with a vegetable peeler. Slice the ends off the squash, and then cut it in half width-wise. Cut the round bottom piece in half lengthwise and scoop out the seeds. Cut squash into spears.
  3. Spray a baking sheet with coconut oil (or other oil of preference).
  4. Lay spears flat and sprinkle with salt, pepper, and other seasoning of choice.
  5. Bake for 20 minutes, and then flip spears. Continue to bake until tender on the inside and crispy on the outside, about 25 minutes longer.

You can also make bakes sweet potato fries. They are very good seasoned with Paprika. Flip sweet potato spears after 15 minutes, bake additional 10 to 15 minutes.
