Baked Mustard Cilantro Lime Chicken

Ingredients

  • 1 lb boneless, skinless chicken (breasts or thighs)
  • 1/2 cup fresh lime juice
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup dijon mustard
  • 1 Tablespoon olive oil
  • 1 Tablespoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  1. Combine ingredients in a food processor
  2. Rince and pat dry chicken
  3. Marinade chicken 15 minutes to 6 hours.
  4. Preheat oven to 350°.
  5. Bake 18 to 20 minutes uncovered.
