Crab Cakes

Ingredients

  • 2 cans crab meat
  • 2 to 3 green onions, diced
  • 1/4 cup finely shredded carrot
  • 1 red pepper, diced
  • 3 to 4 Tablespoons flax meal
  • 2 eggs
  • 1 Tablespoon dijon mustard
  • sprinkle of dried or fresh parsley
  • salt and pepper
  • 2 to 3 radishes, diced (optional)
  • 1 jalapeƱo, seeded and diced (optional)
  • coconut oil spray

Directions

  1. Mix ingredients in a bowl. Shape into small cakes.
  2. Heat oiled skillet or grill to medium heat.
  3. Cook 3 to 5 minutes each side.
  4. Place on plate with paper towels or transfer to oven for warming.
  5. Good served over wilted spinach and pea shoots.
