Avocado Mango Salad

Ingredients

  • 1 to 2 mangos, cubed
  • 1 to 2 avocados, cubed
  • 1/4 red onion, diced
  • salt and pepper
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon lime juice
  • 2 Tablespoons olive oil
  • garnish with basil, cilantro, or mint and slivered almonds

Directions

  1. Whisk dressing. Toss.
  2. Serve plain, with shredded chicken, and/or over arugula or spinach. You can also add radishes or pea sprouts.
