Grain-free, Dairy-free Chicken Fingers

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 Tablespoon flax meal (ground flax seed, apparently fresh is better)
  • 1 cup almond meal or coconut flour
  • 1 Tablespoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 eggs
  • coconut oil spray
  • 2 to 3 cloves garlic, crushed

Directions

  1. Preheat oven to 375° and cut chicken into 1 to 2-inch strips.
  2. Mix seasons with almond or coconut flour and flax meal.
  3. Dredge chicken pieces in egg and coat with mixture.
  4. Place on a parchment-lined baking sheet.
  5. Bake 20 to 25 minutes. Turn after 10 minutes.
