Roast Pork Tenderloin

Ingredients

  • 1 pork tenderloin
  • 1 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • olive oil

Directions

  1. Preheat oven to 425°.
  2. Trim off excess fat, rinse, and pat tenderloin with a paper towel.
  3. Rub seasoning mixture all over meat.
  4. Put olive oil in a hot cast-iron skillet.
  5. Sear tenderloin on all sides, turning with tongs not a fork to keep in juices.
  6. Bake for 12 to 15 minutes or until no longer pink. Rest 10 minutes.
